Diets This spread approximates the taste of chopped liver, without the liver. Made from onions, mushrooms, eggs, and nuts, this recipe is perfect for vegetarians or a pareve or dairy meal. Courtesy of the Women’s Branch of the OU.
2 onions, chopped
1/4 pound mushrooms, chopped
3 tablespoons oil
3 hard-cooked eggs
1/4 pound shelled walnuts
1 teaspoon salt
Heat oil in frying pan. Add onions and mushrooms, sauté until onions are browned (about eight to 10 minutes).
Put into food processor with chopping blade, then add eggs, walnuts and salt. Process until no large pieces are left.
Scrape into a bowl and chill several hours or overnight.

Clarification on Eggs Thank you for sharing this recipe as it looks like something I can do, lol.
I’m wondering by “hard-cooked eggs” are you meaning instead of over easy/medium cook them solid all the way through?
Or are you meaning scramble them?
I’m wanting to make this tonight as I just finished the portion I bought from my (not at all local) kosher market. Will save me lots of time and gas making it at home whenever I get that random craving for it, haha
