Diets Refreshing fruits and cheesecake is one of my favorite combos and I’m sure it will become yours too! Feel free to switch around or add fruits of your choice such as cherries, blueberries, etc.
1 box strawberries, washed and checked
fresh or Beleaves Frozen fruit of your choice
Gefen Confectioners’ Sugar, for dusting
1 16-ounce container Kineret Whipped Topping
1 packet Gefen Instant Vanilla Pudding
In the bowl of a stand mixer fitted with the whisk attachment (or a mixing bowl with a hand mixer) whip up the whipped topping, on high speed, until stiff peaks form.
Add the packet of instant vanilla pudding and incorporate well, mixing on high speed for about a minute.
Place the whipped cream in a piping bag fitted with a star tip.
Lay the strawberries in a circle, cut side down, close to the rim of the cheesecake.
Pipe some cream around each strawberry and place some smaller berries (or whichever fruits you’re using) around them.
Keep piping and placing the fruits, until the “wreath” is all done.
Dust with confectioners’ sugar.
