4 zucchinis, peel on, grated by hand
1 and 1/4 cups pareve pancake mix (like Aunt Jemima or Estee Kafra brand)
1 generous teasooon salt
1 teaspoon baking powder
3 eggs
oil, to fry
1/2 cup smooth peanut butter
1/4 cup chocolate chips
1 tablespoon vegetable oil
Warm generous amount of oil in frying pan.
Grate zucchinis by hand, sprinkle with the salt, and let it sit a few minutes. Drain the extra liquid.
Add the pancake mix, baking powder and the eggs and mix together.
Carefully ladle batter into frying pan, and fry on each side until completely brown. Don’t flip until all edges are brown.
Melt peanut butter and chocolate chips in a small saucepan until melted. Add oil and mix well.
Pour into small bowl and serve alongside the zucchini latkas as a dipping sauce.
