This cozy, flavorful zucchini split pea soup is just what you want to eat on a dark and chilly autumn or winter evening.
1 large onion, diced small
2 cubes Gefen Frozen Garlic
3 tablespoons Gefen Olive Oil
1 large carrot, grated
12 small zucchini (the thinnest you can find), cut into small cubes
2 packages Manischewitz Split Pea Soup Mix
Add diced onion with oil to an eight-quart pot and sauté until translucent. Add garlic and sauté until fragrant.
Add carrots and sauté for two minutes. Add both tubes of split pea soup mix and eight cups of water.
Cook on low flame for one hour until peas are soft.
Add zucchini and cook for another 30 minutes.

How many large zucchini should I use to replace the 12 small zucchinis?
6-8 large ones depending on how big they are
