Sweet Chili Yellow Beets and Japanese Eggplant
2 Japanese eggplants, cut in rounds
8-10 small yellow beets, peeled and cut in half
1 tablespoon paprika
1 tablespoon brown sugar
1/2 teaspoon smoked paprika
pinch cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon sea salt
1/4 teaspoon black pepper
3 tablespoons olive oil
3 tablespoons avocado oil
1/4 cup sweet chili sauce, and more for brushing
