Preheat oven to 350 degrees Fahrenheit. Grease three two-pound loaf pans with nonstick cooking spray.
In the bowl of an electric mixer, add all the ingredients, mixing after each one is added. When your batter is smooth, pour a third of the batter into each pan.
Bake for 30 to 40 minutes until a toothpick inserted into the middle comes out clean. Cool before using.

Is orange juice needed? Would lemon juice work?
lemon juice might add too strong of a flavor.... you can for sure test it out or try a plant-based milk instead of O.J.
I did almond milk mixed with lemon juice. came out delicious. Definitely tasted like more of a lemon cake though
you can make lemonade and use that instead of O J
I’ve heard people do it but it gives it a slightly different taste I think. Lemon is more acidic than orange
