Olive and Roasted Garlic Sourdough

Here is a variation you can try with your regular sourdough recipe: olive and roasted garlic with a touch of seeds and spices.

I made two loaves of sourdough, one for the photoshoot and one to freeze. The house smelled so incredible while baking that my kids insisted we cut the second loaf, and it was gone in no time! It is definitely worth trying. Simply use your standard sourdough recipe and incorporate these add-ons.

Yield: 1 loaf

3h 30m 6
Medium Vegetarian Pescatarian Parve

Contains: Gluten, Wheat, Egg

Directions

  1. To roast the garlic, wrap the head of garlic in foil and place it in the oven at 350 degrees Fahrenheit for one hour. Remove it from the oven and let cool. Then, slice open the top and squeeze out six garlic cloves. Reserve the remaining garlic for another delicious use, such as Zissie’s salad.

  2. An hour before placing your sourdough in the oven, gently knead the olives and the six roasted garlic cloves into the dough.

  3. Shape the dough into a loaf and place it into a lined cast-iron pot sprayed with cooking spray.

  4. Brush the top with the beaten egg and lightly sprinkle with the salt, garlic powder, cumin, regular sesame seeds, and black sesame seeds.

  5. Let the dough rest for one hour, covered.

  6. Bake covered at 375 degrees Fahrenheit for 45 minutes, then uncover and bake for an additional 15 minutes.

  7. Remove the sourdough from the pan and let it cool.
