Directions

Prepare the Patties

  1. In a medium bowl, mix quinoa, eggs, cornflake crumbs, salt, garlic, scallions, and pepper until well combined.

  2. In a skillet, heat oil on medium heat until hot. Form patties and fry over medium heat for approximately five to six minutes per side, until golden and crispy. Transfer patties to a plate.

  3. Mix aioli ingredients until well combined and serve on top of patties. Serve the patties warm, or at room temperature.

Variations:

Sliced chives can be used in place of scallions.

Yields 10–12 patties.

Perfect quinoa patties! I used carrot instead of scallion as that's what I had. The consistency and taste were great.

how many cups of quinoa should I put in the pot to get 2 1/2 cups cooked?

The ratio is the same as rice.

Mistake in Diet listing You have listed this recipe as Vegan which it is not as it has both eggs and mayonnaise. Is there a ture vegan version of this?
