Directions

Prepare the Latke Dogs

  1. Grate potatoes and onions together on the large side of a box grater or using the grating blade of a food processor. Don’t worry if they brown. They’re going to turn brown when you cook them anyway.

  2. Stir in the mashed potato flakes and season with salt and pepper.

  3. Dip each hot dog into the flour or mashed potato flakes. Tightly press (squeeze) the latke batter into the hot dog and roll it to secure.

  4. Fry the latke dogs in 1/2 inch of oil for three to four minutes per side (all four sides) and season with salt after frying.

Variations:

The same batter can be fried into latkes and used as hamburger buns.

Instant mashed potatoes are potatoes that have been through an industrial process of cooking, mashing and dehydrating to yield a packaged convenience food that can be reconstituted by adding hot water or milk, producing an approximation of mashed potatoes. You can google it to see what they look like.
