We just love the combination of a cheesecake-like filling paired with cherries.

Not only is the color combination stunning and perfect for spring, but it also lends itself to the perfect balance of sweet and slightly tart blintzes.

It's one of those classic pairings that is comfort food at its finest.
To make things even easier, we used Gefen cherry pie filling. (There's nothing like a great shortcut!)
