Easy Matbucha

Ingredients:
1 onion, chopped
1 red pepper, chopped
1 green pepper, chopped
1 jalapeno pepper, chopped
4+ plum tomatoes, chopped
Oil
Salt and Pepper, to taste
Tomato paste, to taste
Garlic Powder, to taste
Sugar, to taste
Directions:
1. Preheat oven to 375 degrees Fahrenheit.
2. Place chopped veggies on a large sheet pan.
3. Spray with oil and season with salt and pepper.
4. Roast for about 30-40 minutes. Allow to cool.
5. In a bowl of a food processor, place the roasted veggies with some tomato paste, garlic powder, and a little bit of sugar. Blend until desired consistency.
