This is the perfect Rosh Hashana dessert: apples, honey, and dates all in one bite! It’s gluten free and refined sugar free too.
Makes 12 medium/large muffins.
3 ripe bananas
2 eggs
3 tablespoons Gefen Honey
1 teaspoon Gefen Vanilla
1 tablespoon oil
2 cups gluten-free all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon Gefen Cinnamon
2 apples, peeled and chopped
1/4 cup chopped dates
1/4 cup Heaven & Earth Date Sugar
1/4 cup oats
2 tablespoons oil
Mix muffins ingredients together.
In a separate bowl, mix topping ingredients together.
Scoop out muffin batter into muffin tins. Sprinkle on topping.
Bake at 350 degrees Fahrenheit for 24 minutes.
