Diets These muffins are a family tradition, perfect for dessert on Rosh Hashanah.
Yield: 14 muffins
2 sticks margarine, cubed
1 egg
1 teaspoon baking powder
1 tablespoon Gefen Vanilla Sugar
1 cup sugar
a little less than 3 cups Glicks Flour
1 Cortland apple, diced
14 teaspoons custard, divided
Gefen Confectioners’ Sugar, for dusting
Preheat oven to 350 degrees Fahrenheit. Spray muffin tins with oil.
In the bowl of an electric mixer, combine margarine, egg, baking powder, vanilla, sugar, and flour. Mix until a smooth dough forms.
Press a piece of dough into each muffin case, fully covering the bottom and sides and creating a cavity.
Place a few pieces of diced apples and a teaspoon of custard in each.
Cover with another piece of dough so the apple and custard are fully closed in.
Bake for 25–30 minutes.
Dust with confectioners’ sugar before serving.
