Diets Who knew ginger and apricot were so great together? Mind is blown. Although the ingredients sound different, the sweetness of the apricot and the sweet potato really complement the savory components well. It’s sweet potato wedge 2.0, with flavors that everyone, young and old, can enjoy.
4 medium sweet potatoes, washed well, skin on
salt, to taste
pepper, to taste
1/4 cup apricot jam, such as Tuscanini Apricot Fruit Spread
2 tablespoons olive oil
2 tablespoons sesame oil
2 tablespoons soy sauce
2 cubes Gefen Frozen Garlic
4 cubes Gefen Frozen Ginger
2 teaspoons dried onion flakes
Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
Cut sweet potatoes into wedges. Arrange them in a pan, making sure they’re not overlapping (you’ll probably need two separate pans).
Season with salt and pepper.
Whisk the rest of the ingredients in a bowl and pour evenly over the sweet potatoes. Toss together.
Bake for 45 minutes, checking and mixing halfway through.
