Asian Chicken-Stuffed Mushrooms

Ingredients

Stuffed Mushrooms

  • 2 pints cremini (baby bella) mushrooms

  • 1 pound ground chicken

  • 1/3 cup hoisin sauce

Hoisin Glaze

  • 1 tablespoon water

  • 2 tablespoons hoisin sauce

Directions

Prepare the Asian Chicken-Stuffed Mushrooms

1.

Remove stems from mushrooms, clean caps, and set aside.

Preheat oven to 400 degrees Fahrenheit.

In a bowl, mix ground chicken with hoisin sauce and scallions (reserve a few teaspoons for garnish).

Scoop one tablespoon of the chicken mixture into each mushroom cap. Bake for 20 minutes or until chicken is cooked through.

5.

In a bowl, mix glaze ingredients. Glaze the chicken, then place on the top rack in the oven and broil on low for one to two minutes, until slightly browned.

6.

Assemble: Skewer mushrooms horizontally on medium-sized skewers and garnish with sesame seeds and reserved scallions.

Tips:

You can cook this ahead of time and place under the broiler right before serving.
