These avocado deviled eggs are a perfect thing to make for before the fast. It can be prepared on Shabbos so it’s perfect for Shalosh Shudes and gives you protein and healthy fats. Pair it with a whole grain for a complete meal that will keep you going.

Ingredients

Avocado Deviled Eggs

  • 6 hard-boiled eggs

  • 1 small avocado

  • 1/2 lemon, squeezed or about 1 and 1/2 tablespoons Gefen Lemon Juice

  • 1/4 to 1/2 teaspoon Gefen Salt (use less salt for pre fast so as not to get thirsty during the fast)

  • pinch of black pepper

  • 1/4 teaspoon Gefen Garlic Powder

  • 3 tablespoons plain Greek yogurt (this makes the filling super smooth and adds a little tang. If you do not like Greek yogurt, omit it; it will still be delicious! 🙂

  • paprika and/or chives for garnish

Directions

1.

Peel the hard-boiled eggs and slice them in half, lengthwise. Remove the yolks into a bowl.

2.

Mash the yolks with the avocado.

3.

Add the lemon, salt, pepper and garlic powder. Mix in the Greek yogurt until super smooth. Spoon the filling into the egg white halves.

4.

Sprinkle it with paprika and chopped chives.
