This really simple potato salad is quite easy to throw together last minute. Easy yet tasty, save time by leaving the potato skin on. Make sure not to overcook the potatoes or they will fall apart while mixing.
5 pounds potatoes, boiled in peels
16 ounces Haddar Cucumbers in Brine
1 cup frozen green peas (optional)
2 carrots, grated
1 onion, minced
6 tablespoons vinegar
1/2 cup Gefen Mayonnaise
1 and 1/2 tablespoons sugar
2 teaspoons salt
Peel and cube potatoes.
Add remaining ingredients, toss gently to coat.
