You know something is good when your daughter asks you for doubles, and on leftovers night to boot! This roast doesn’t have any heavy sauces—it’s light and soft as butter.
1 medium-sized (about 4 and 1/2 pounds) brick roast
1 bottle light beer
1 onion, sliced
5 cloves garlic, such as Mr. Dipz Peeled Garlic, left whole
salt, to taste
1/2 teaspoon freshly ground Gefen Black Pepper
2 carrots, peeled and julienned
Preheat oven to 300 degrees Fahrenheit.
Place the roast in the center of a roasting in pan. Pour beer over roast. Sprinkle on onions, garlic, salt and crushed black pepper. Place julienned carrots all around.
Cover and bake in preheated oven for about two and a half hours. Let cool and then slice thinly.
