Ingredients

Meat and Rub

  • 3–5 pound (1.4–2.3 kg) roast (this works beautifully on all beef roasts. I particularly like the French and Delmonico cuts)

  • salt

  • paprika

  • onion powder

  • garlic powder

Sauce

  • 1 tablespoon margarine (use soy-free, if needed)

  • 1 clove garlic, crushed or 1 cube Gefen Frozen Garlic

Directions

Prepare the Meat

1.

Preheat oven to 325 degrees Fahrenheit (170 degrees Celsius). Rinse roast and pat dry. Place in a 9×13-inch baking pan and sprinkle with salt, paprika, onion powder, and garlic powder. Smear over the roast surface. Place in oven and bake uncovered for 20 minutes.

While roast is baking, prepare the sauce. In a small saucepan, combine sauce ingredients. Bring to a boil over medium heat. Reduce heat to low and simmer approximately 10 minutes, until the sauce reduces slightly and thickens. .

3.

Pour sauce evenly over roast. Continue to bake until the internal temperature reaches 130–140 degrees Fahrenheit (54–60 degrees Celsius) for medium rare.

Open baking Can I bake it covered? And is it only good if it’s medium rare?

It is always good to bake it uncovered for the first 20 min to give it a little sear. However, if you do not want to bake it uncovered you can sear it on the stovetop and then bake it covered in the oven. You can cook it for as rare or well-down as you like it.

Baketime? Without a meat thermometer how much time should it take, approximate?

HI Devorah. In order to get a perfect medium rare you really need a thermometer. You can try to bake it for at least 3 hours on 325, but without seeing not just the poundage, but the shape, there is no way to know exactly how long. Thermometers are pretty cheap and such a good investment.

Maple Syrup Is pancake syrup the same thing as maple syrup?

I use maple syrup instead of pancake syrup most of the time so i don’t see why you cannot use it. it should be ok

They’re not the same. Pancake syrup is a highly processed product with a base of corn syrup or high-fructose corn syrup and stabilizers, maple syrup is made just from boiling down the sap of maple trees.

Keep it uncovered. As far as timing, there can be massive variations in time if you take in factors like how thick the roast is versus how flat it is, how accurate your oven is, etc. It’s always best to rely on a meat thermometer (you can buy them for just a few dollars online or in a kitchen supply store) and never have to guess. Good luck!
