1 large onion, halved and sliced
1 red bell pepper, sliced thin
1 green bell pepper, sliced thin
1 small jalapeno, sliced into rounds
2 cloves garlic, chopped or 2 cubes Gefen Frozen Garlic
2 cans black beans, rinsed and drained
2 tablespoons chili powder
1 tablespoon cumin
2 teaspoons Gefen Oregano
1 teaspoon paprika
2 tablespoons Heaven & Earth Raw Honey
soft tortillas
guacamole
fresh, washed cilantro
lime wedges
tomato mango salsa
Heat a large skillet over fire.
Add olive oil and onions and sauté until caramelized. The more color the onions develop, the better the dish will turn out.
Add in peppers, garlic, and jalapeno and mix until softened.
Add in black beans and spices. Mix frequently for the next five to 10 minutes until heated through and smokey. Drizzle with honey.
Serve in charred mini flour tortillas with guacamole, fresh cilantro, lime wedges, and a tomato mango salsa!
