Diets This blueberry-cherry cake is the perfect fruit cake. It’s a classic vanilla cake batter with cans of pie filling, that’s it! Not too sweet, with just enough fruit to bite into, and it comes out looking so pretty.
8 eggs
3 cups sugar
2 cups oil
1 cup orange juice
4 teaspoons vanilla sugar
4 teaspoons Haddar Baking Powder
6 cups flour
1 (21-ounce) can Gefen Blueberry Pie Filling
1 (21-ounce) can Gefen Cherry Pie Filling
Beat eggs and sugar until light and fluffy. Add oil and orange juice, mixing well.
Add dry ingredients and mix thoroughly.
Pour three quarters of batter into 16- x 10-inch pan. Over one half, spread blueberry filling. Over second half, spread cherry filling. Pour remaining batter on top.
Bake at 350 degrees Fahrenheit for one hour. Sprinkle with confectioner’s sugar.
