These great biscottis could be topped with any toppings. It is a great dough to shape out nicely.
3 eggs
1 and 1/4 cup sugar
1 and 1/4 cup oil
2 teaspoons baking powder
1 scoop vanilla sugar
4 cups flour
Toppings for your choice
Mix the eggs, sugar, oil, baking powder, and vanilla sugar. Add the flour.
Wet your hands and make 4 loaves.
Bake at 350F for 45 min.
Cut into slices.
Rebake for 20 min for extra crispy.
You may than drizzle chocolate, pecans or anything of your choice.
Yields 24 biscotti

Instead of baking it first for 45 min, I baked it for 20 min and directly cut the loaves into slices. Then I baked it for an additional 15 min.
