Besides their great taste, cabbage salads are great for their long fridge life. Just make sure to pick out the nuts before storing.
1 small sweet potato, peeled and cubed
2 tablespoons oil
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups red cabbage
1 cup riced broccoli such as Beleaves
1/4 cup cashews
1/4 cup Gefen Dried Cranberries
2 tablespoons oil
1 tablespoon brown sugar
1 tablespoon Gefen Maple Syrup
1/2 teaspoon Gefen Peanut Butter
1/2 teaspoon Tuscanini Balsamic Vinegar
Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
In a medium mixing bowl, toss sweet potato with oil and spices. Spread onto baking sheet and bake for 15 minutes. Toss and bake for an additional five minutes.
In a small bowl, whisk dressing ingredients together.
Place salad ingredients in a large salad bowl and cover with dressing. Toss and serve.
