Ingredients

Spelt Honey Cookies

  • 3 cups white spelt flour [I used 3 and 1/4 cups]

  • 3/4 cup neutral oil

  • 2/3 cup brown sugar

  • 2/3 cup honey

  • 2 large eggs

  • 1 and 1/2 teaspoons vanilla extract

  • 1 teaspoon baking soda

  • 3/4 teaspoon baking powder

  • 3/4 teaspoon salt

  • 1 and 1/2 teaspoons cinnamon

  • 1/2 teaspoon ginger (optional)

Directions

1.

Preheat oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.

Whisk together oil, brown sugar, honey, eggs and vanilla until smooth.

Add flour, baking soda, baking powder, salt, cinnamon and ginger.

4.

Mix just until the flour disappears. Don’t overmix and don’t add extra flour if the dough feels soft.

5.

Chill dough for 20–30 minutes.

6.

Divide into 40 balls, about a heaping tablespoon each. If sticky, lightly oil your hands. No need to flatten.

7.

Bake for nine minutes. The edges should look set while the centers still look soft and slightly underbaked.
