I call the caramel in this recipe “caramel for lazy people” because it is so easy to prepare and always comes out great. I like to use a different type of nut each time I make it to change things up: pecans, hazelnuts, walnuts, pistachios, and almonds.

Use a disposable 8”x12” pan

2h 30
Medium Vegetarian Pescatarian Dairy

Contains: Gluten, Wheat, Dairy, Egg, Tree nuts

Directions

Prepare the Crispy Dough

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Using the flat beater hook in the mixer bowl, mix all the dough ingredients until a uniform dough is obtained.

  3. With your hands, spread the dough into a thin and even layer in a disposable pan.

  4. Place in the oven and bake until it lightly browns. Remove from the oven and allow to cool completely.

Prepare the Nut Filling

  1. Combine the butter and brown sugar in a wide saucepan.

  2. Place on a medium flame just until the butter completely melts.

  3. Add the honey, salt, and cream to the pan and mix well until a smooth mixture is obtained.

  4. Remove from the heat and add in the chopped nuts. Mix well so that all the nuts are coated with the caramel mixture.

  5. Pour the nut mixture into the cooled dough.

  6. Lightly press with a spatula to flatten the mixture.

  7. Bake for about 20 minutes in an oven preheated to 350 degrees Fahrenheit.

  8. Remove and allow to cool completely.

Prepare the Chocolate Layer

  1. Place the cream and the broken chocolate in a bowl placed over a pot of boiling water (bain-marie) and cook until you get a uniform creamy mixture. (This can also be done in the microwave.)

  2. Pour the melted chocolate over the baked caramel nuts and lightly shake the pan to get a level surface.

  3. Freeze for an hour and cut into small bars.

Note:

This will keep in the refrigerator for up to a week, or in the freezer for up to two months.
