Since these cheese latkes are made with farmer cheese, they hold the shape better and are filling with a dash of cinnamon takes it up a notch.
1 lb farmer cheese
1/2 small container sour cream, plain yogurt or vanilla yogurt – can use Greek as well if preferred
2 tbsp vanilla sugar (omit if using vanilla yogurt)
3/4 cup flour
3 eggs
1/4 – 1/3 cup sugar adjust to taste
Dash cinnamon
Mix all ingredients together until desired smoothness, for smoother mixture use hand blender.
Heat up an oiled griddle or frying pan. When hot drop in spoonfuls of mixture.
