Cheesecake Brookie

Ingredients

Brownie Base

Chocolate Chip Cookie Layer

  • 1 stick margarine

  • 1 tablespoon vanilla sugar

  • 1/4 cup sugar

  • 1/2 cup Haddar Brown Sugar

  • 1 egg

  • 3/4 teaspoon baking powder

  • 1 and 1/3 cups Glicks Flour

  • 1 cup mini chocolate chips

Cheesecake Layer

  • 2 8 ounce cream cheese

  • 2 eggs

  • 1/2 cup sugar

  • 1 teaspoon vanilla extract

Directions

Prepare the Brownie Base

1.

Line a 9×13 baking pan and preheat the oven to 350 degrees Fahrenheit.

In a bowl, beat the eggs and sugar together until well combined.

3.

Add the remaining ingredients and mix until fully combined.

4.

Transfer the brownie batter into the prepared pan and spread it into an even, thin layer. Set aside.

Cheesecake Layer

1.

In a medium-sized bowl, combine all the cheesecake ingredients and blend until the mixture is very smooth.

2.

Spread this mixture over the brownie base.

Prepare the Chocolate Chip Cookie Layer

1.

In a separate bowl, cream the margarine and sugar together for a few minutes.

2.

Then, mix in the eggs and the remaining ingredients until well combined.

3.

Drop tablespoon-sized balls of cookie dough over the cheesecake layer.

4.

It’s okay if you don’t achieve full coverage; you want some of the cheesecake and brownie layers to peek through after baking.

5.

Bake for 45 to 55 minutes.

6.

Allow to cool before cutting into squares.
