This recipe is so great you’ll want to make it after Pesach too!
6 sweet potatoes
3 pounds chicken breast, cut into strips
1 red pepper, sliced
1 yellow pepper, sliced
1 red onion, sliced
2 cubes Gefen Frozen Garlic
Fajita spice mix (see below)
juice of 1 lime (or about 2 tablespoons Heaven & Earth Lime Juice)
garlic mayonnaise, for drizzling
1 and 1/2 tablespoons chili powder
1 teaspoon garlic powder
1/2 teaspoon Haddar Kosher Salt
1/2 teaspoon black pepper
Wash sweet potatoes and dry them well. Using a fork, poke holes in sweet potatoes. Wrap tightly in foil and bake at 350 degrees Fahrenheit for one hour.
In a large skillet, sauté chicken, peppers, red onion, and garlic. Sprinkle with spices and lime juice and continue sautéing until fully cooked.
Slice sweet potato open down the middle and mash the flesh, leaving the skin whole. Stuff the chicken mixture in. Drizzle with garlic mayonnaise.
