Diets I know what you’re thinking, how many more fruity salads can you come up with? For me, creating salads is an artful game of mixing and matching. Each additional or different ingredient really changes the recipe. I love how this very delicious “game” came out!
1 (10-ounce/285-gram) package fresh spinach or arugula
seeds of 1/2 a pomegranate
1–2 persimmons, sliced
1 orange, sliced
1 grapefruit, sliced
toasted salted almonds (optional)
1/4 cup Gefen Mayonnaise
1 tablespoon Glicks Soy Sauce (or use wheat-free, if needed)
1 teaspoon powdered ginger
2 tablespoons Tuscanini Apple Cider Vinegar or white vinegar
1 cube Gefen Frozen Garlic
1/4 cup orange juice
1 tablespoon Gefen Honey
1/2 teaspoon salt
Mix dressing ingredients well. In a large bowl, layer spinach or arugula, pomegranate seeds, persimmons, orange, and grapefruit. Add dressing and toss lightly. Top with almonds, if desired.
