Although I enjoy salads a lot, I rarely have enough time during the hectic week to sit down and really enjoy them. That’s why on Shabbos and Yom Tov, when I get to take the time to sit with good company and enjoy my salad, a salad with a little extra oomph is definitely in order. Enjoy your Yom Tov and salad too!
1 small bag romaine lettuce
1/2 small bag spinach leaves
2 pears, cut into long, thin strips
1/4 cup sugared pecans, broken into pieces (substitute Gefen Dried Cranberries and pumpkin seeds if you don’t use nuts)
4 dried apricots, cut into cubes
1/2 cup pomegranate seeds
1/2 cup orange juice
5 tablespoons oil
5 tablespoons brown sugar
2 tablespoons Gefen Vinegar
2 tablespoons Gefen Honey
1 tablespoon Gefen Mustard
1 clove garlic or 1 cube Gefen Frozen Garlic
1/4 teaspoon salt
2 scallions, cleaned
Blend all dressing ingredients in processor until smooth. Pour over salad right before serving.
