I love a good side dish that takes traditional food and brings it up a notch. The flavors of this couscous are so delicious—a little savory, a little sweet—and slightly different than your usual. It’s great paired with chicken or meat.
1 (8.8-ounce) package couscous (see note)
2 tablespoons oil
1 medium onion, diced
3 cloves garlic, minced or 3 cubes Gefen Frozen Garlic
1 teaspoon dried parsley, such as Gefen
salt
pepper
7 dried apricots, diced
10 dried dates, checked, diced
1/4 cup Gefen Dried Cranberries
Cook couscous according to package directions and transfer to a 9×13-inch pan.
Meanwhile, heat oil in a small frying pan, and sauté onion for about 10 minutes until light brown. Add minced garlic and sauté for another few minutes until garlic starts to brown. Add onion and garlic to pan with couscous along with parsley, salt, and pepper; mix well.
Add apricots and dates to couscous and mix. Mix in cranberries right before serving (do not add them earlier or it will turn the couscous pink—trust me, I speak from experience!).
Serve at room temp.
