Healthy yet delicious – a family favorite! I always double this recipe. Freezes beautifully.
2 tablespoons Gefen Canola Oil
1 onion, chopped
1 clove garlic
5 cups water
2 and 1/2 cups sliced carrots
1/4 cup raw rice (I use brown rice)
2 tablespoons chicken soup mix/consomme (meat or parve)
salt to taste
Sauté onion and garlic in oil until soft.
Add water, carrots, rice, and consomme. Bring to a boil and then simmer for 30 minutes or until carrots are soft.
Blend in pot using immersion blender.
