This is similar to Rakut Krumple but with a delicious different twist.
8 potatoes
6 hard boiled eggs
oil for sautéing
1 onion
1 16-oz container sour cream
pinch of salt
1/4 cup fresh parsley chopped
shredded cheese
Slice potatoes 1/4 of an inch thick and boil them till they are soft but not falling apart. Drain the water from potatoes.
Meanwhile sauté the onion in oil until slightly browned.
Slice the hard boiled eggs.
Make a mixture of sour cream, sautéed onions, parsley and pinch of salt.
Line a 9×13 with parchment paper, then start assembling the layers. First put a layer of potatoes, top with a layer of the sour cream mixture and then a layer of hard boiled eggs, then the sour cream mixture and repeat the layers potatoes, sour cream and eggs etc. You want to be generous with the sour cream mixture.
When you’re done with layering the eggs, sour cream mixture and potatoes, top with a generous layer of hard cheese. Bake at 350 for 20 minutes.
