Hi! I would mix some apricot jam with rice vinegar and a little soy sauce to make an easy “homemade” version.

Can I coat the chicken & leave it in the fridge until I’m ready to cook it? Also, can I make the sauce ahead of time?

Yes, the chicken can be breaded up to a day in advance. You can definitely leave the sauce ahead of time.
