It took quite a bit of experimentation to come up with this no-fail formulation that checked all my boxes—minimal ingredients and equipment, moderately healthful, fully cooked eggs, and of course, a delicious outcome! It’s rich, nutty, and not overly sweet.

40m 8-10
Easy Vegetarian Pescatarian Gluten Free Parve

Contains: Tree nuts, Egg

Directions

Prepare the Toasted Hazelnuts

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Place hazelnuts in a 9×13-inch baking pan. Bake for 12–15 minutes, until fragrant and lightly browned.

  3. Transfer to a clean dishtowel; rub to remove skins. It’s okay if some skin remains.

  4. Place hazelnuts in a food processor fitted with S-blade. Process until coarsely chopped.

  5. Set aside 1/2 cup + three tablespoons chopped hazelnuts.

Prepare the Mousse

  1. Continue to process remaining hazelnuts at high speed until pasty, scraping down sides a few times in middle.

  2. Add chocolate chips and eggs to food processor. Process at high speed until chocolate chips have been finely ground.

  3. Meanwhile, in a heavy saucepan, heat parve milk and brandy, if using, until scalded (hot but not boiling).

  4. As food processor runs at a low speed, drizzle hot milk mixture through food processor chute in a very slow stream.

  5. Transfer mixture back to saucepan.

  6. Cook over low heat, stirring constantly with a wooden spoon for 10 minutes, until mixture reaches 160 degrees Fahrenheit or begins to thicken like a custard.

  7. Immediately plunge saucepan in a bowl of ice water. This brings eggs to a safe eating temperature.

  8. Remove from heat.

  9. Stir in 1/2 cup reserved chopped hazelnuts.

  10. Spoon into mini mousse cups.

  11. Top with remaining three tablespoons chopped hazelnuts.

  12. Refrigerate until cool before serving.

I followed the steps exactly but it isn't turning into a custard consistency- in this case does it need to be cooled before spooning into mousse cups?

It should turn into a thicker custard consistency while on the stove. Did it thicken at all? It will continue to thicken in the fridge.

Can this recipe be frozen in advance? Or how long can it be kept in the fridge?

It can definitely be frozen and I think it should keep in the fridge for up to 3-4 days
