Diets When we spend 8 days eating fried foods, it’s nice to have a healthy but fun alternative. Next time you’re standing at the stove frying up some latkes, reserve some of the batter to make these latke croutons. It will turn this salad into a most delicious and fun appetizer or main. Happy Chanukah!

mixed greens
scallions
sliced olives
feta cheese
1 medium sized beet, thinly sliced or spiralized
latke croutons
3/4 cup mayonnaise
1/4 cup white wine vinegar
1/4 cup olive oil
2 tablespoons maple syrup
1 garlic cube
1 teaspoon Kosher salt
1/4 teaspoon black pepper
2 potatoes
1 egg
1 and 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
Combine ingredients of dressing and mix well.
Grate or shred potatoes using a food processor or hand grater.
Add egg, salt and pepper. Mix well.
Using 1/4 teaspoon measuring spoon, add batter to frying pan with hot oil and fry for two minutes on each side. Remove onto a paper towel lined plate.
When done frying the latke croutons, add beets to the pan and fry/saute for five minutes until crispy and cooked.
Layer salad with all ingredients.
Top with latke croutons.
Drizzle dressing over salad and enjoy!
