Diets I was thrilled to compete on the Food Network’s hit show Chopped. As a finalist, in just 30 minutes I turned traditional Tzimmes into a sweet dessert, and wowed the judges!
1 bunch rainbow carrots (approximately eight)
2 cups simple syrup (equal parts water and sugar, brought to a boil)
8 fresh figs
2 tablespoons margarine or butter
1 tablespoon brown sugar
Peel the carrots and boil them in simple syrup until tender.
Slice the figs in half and place in a pan with the cut side facing down. Caramelize for three minutes on medium heat. Once the figs are tender, slice the carrots and add them to the figs.
Add the margarine or butter and sprinkle with brown sugar.
Candy the carrots for about four minutes and serve warm.
