Say that three times fast, but first dig in. Pesto is one of those flavors that makes a dish sophisticated without needing to break out your entire pantry. The chicken adds the protein component to round out the dish.
1/2 box linguine pasta
2 tablespoons Gefen Olive Oil
2 chicken breasts, cut in small cubes
1 onion, cut in half and sliced thinly
3 tablespoons pesto, homemade or store-bought, such as Ta’amti
pine nuts, to garnish
fresh basil, to garnish
Cook pasta according to package directions. Reserve half a cup water from the pot and then drain. Set aside.
In a frying pan, heat oil over high heat. Sear chicken about two minutes. Add onions and sauté about five more minutes.
Add linguine to the pan with the chicken and onions. Add reserved pasta water and the pesto. Mix well.
Garnish with pine nuts and basil.
