Easy Pesto Pasta and Chicken

Ingredients

Pesto Pasta and Chicken

  • 1/2 box linguine pasta

  • 2 tablespoons Gefen Olive Oil

  • 2 chicken breasts, cut in small cubes

  • 1 onion, cut in half and sliced thinly

  • 3 tablespoons pesto, homemade or store-bought, such as Ta’amti

  • pine nuts, to garnish

  • fresh basil, to garnish

Directions

1.

Cook pasta according to package directions. Reserve half a cup water from the pot and then drain. Set aside.

2.

In a frying pan, heat oil over high heat. Sear chicken about two minutes. Add onions and sauté about five more minutes.

3.

Add linguine to the pan with the chicken and onions. Add reserved pasta water and the pesto. Mix well.

4.

Garnish with pine nuts and basil.
