Directions

1.

Preheat the oven to 400 degrees Fahrenheit.

2.

Mix the bread crumbs, panko, nutritional yeast, and sesame seeds in a shallow pan.

3.

In another pan, whisk the egg and pesto together.

4.

Dip both sides of your chicken breast in the egg mixture, and then dip it into the bread crumb mixture until fully coated.

5.

Spray a cooling rack with oil spray and place it over a sheet pan.

6.

Place your breaded chicken on the cooling rack. Spray with oil spray until it coats the entire cutlet.

7.

Bake for 25 minutes or until an internal thermometer reaches 165 degrees Fahrenheit and the outside is crispy.

8.

Cool for about 10 minutes before slicing and enjoying.
