This cake takes exactly five minutes to prepare and is the most perfect cake ever. It’s soft, delicate, and moist It can be kept for up to two months in the freezer or one week in a covered container at room temperature.

Directions

  1. Preheat oven to 340 degrees Fahrenheit.

  2. Grease one nine-inch round cake pan or two English cake pans (loaf pans) with a little oil.

  3. Mix all the dry ingredients (flour, baking powder, baking soda, salt, and cinnamon) in a bowl.

  4. In another large bowl, beat the eggs and sugar with a hand mixer.

  5. Add the oil, honey, and coffee and mix well.

  6. Add the dry mixture and beat until a uniform liquid batter forms.

  7. Pour the mixture into the greased pans.

  8. Bake for 40 to 50 minutes, until a toothpick inserted into the cake comes out dry with moist crumbs. If using a round pan, increase the baking time by about 10 minutes.

  9. Garnish with any chocolate cream if desired.
