1 cup parsley, washed and chopped
1 cup cilantro, washed and chopped
1 small red onion, finely diced
Gefen Salt, to taste
pepper, to taste
1/3 cup extra virgin olive oil, such as Tuscanini
1/4 to 1/3 cup Tuscanini Red Wine Vinegar
crushed red pepper flakes (optional)
Mix everything together. Taste and adjust seasoning.
The chimichurri should be bright and balanced, the perfect complement to a beautiful steak.
