Though during the year I try to keep my salads to the healthier side, for Yom Tov I treat my family and guests to something a little more exotic. When I tasted this salad by my cousin Leah’le’s house some time ago, I knew it was one that I’d want to share. Whether you plate it and serve it to start off the meal, or serve it with the main, it’s sure to be a big hit.
1 (16-oz./450-g.) bag shredded lettuce
1/2 avocado, diced
1–2 handfuls exotic dried fruit mix
1 handful glazed pecans or almonds
pomegranate seeds
1/2 cup Gefen Mayonnaise
1/4 cup Gefen Honey
1 tablespoon mustard
2 teaspoons vinegar
1 cube Gefen Frozen Garlic
1–2 tablespoons water
Place the lettuce in a bowl. Arrange the other salad ingredients in neat rows on top of the lettuce.
Combine dressing in a separate bowl and drizzle on top.
