Falafel Rainbow Rice Bowl

Ingredients

For the Bowl

  • 4 cups cooked yellow rice (premixed packages work well, or you could use this recipe)

  • 10 falafel balls, such as Heaven & Earth

  • oil, for frying

For the Eggplant

  • 1 eggplant, cut into chunks

  • 1 teaspoon kosher salt

  • oil, for frying

Cabbage Salad

  • 2 cups shredded green cabbage

  • 1/2 cup chopped cilantro

  • 1 teaspoon black pepper

  • 1/4–1/2 teaspoon salt

Tomato Salad

  • 2 plum tomatoes, sliced

  • 1/2 small onion, thinly sliced

  • 2 tablespoons olive oil

  • 1/4 teaspoon salt

  • 1/2 teaspoon cumin

  • 1/4 teaspoon paprika

  • 1/2 teaspoon garlic powder

Red Cabbage Salad

  • 2 cups shredded red cabbage

  • 1 yellow or orange bell pepper, thinly sliced into 1-inch (2 and 1/2-centimeter) strips

  • 2 tablespoons chopped parsley

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 tablespoons olive oil

  • 1/2 teaspoon chili lime spice

  • juice of 1 lime

Carrot Salad

  • 2 large carrots, grated

  • 1 jalapeño, finely diced

  • 2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic

  • 1/2 teaspoon salt

  • 1/2 teaspoon cumin

  • 2 tablespoons olive oil

  • juice of 1/2 lemon or 1 and 1/2 tablespoons Tuscanini Lemon Juice

For Serving

  • pickled turnips

Directions

Prepare the Eggplant and Falafel

1.

Cube the eggplant, sprinkle with kosher salt, and allow it to sweat for a few minutes. Wipe dry with a paper towel. Heat oil in a skillet and fry the eggplant cubes until golden and tender.

In the same oil, fry the falafel balls until crisp and heated through, then set aside.

Prepare each salad separately.

For the Cabbage Salad

1.

Mix shredded green cabbage, chopped cilantro, black pepper, salt, lemon juice, and olive oil until well combined.

For the Tomato Salad

1.

Combine sliced tomatoes, onion, olive oil, salt, cumin, paprika, and garlic powder, tossing gently.

For the Red Cabbage Salad

1.

Mix red cabbage, pepper strips, chopped parsley, salt, pepper, olive oil, chili lime spice, and lime juice.

For the Carrot Salad

1.

Combine grated carrots, diced jalapeño, minced garlic, salt, cumin, olive oil, and lemon juice.

Assemble the Bowls

1.

Once all the components are ready, assemble the bowls: Place the yellow rice in a large bowl in the center and arrange the salads around it to form a rainbow of colors.

2.

Crumble the falafel balls on top of the rice, drizzle generously with techinah, and garnish with sliced or whole Israeli pickles and pickled turnips.
