1/2 to 1 cup sugar
1 teaspoon lemon juice
1/2 cup water
5 eggs + 2 egg yolks
3/4 cup sugar
1/2 cup Yummy Sweetened Condensed Milk
12 ounces heavy cream
17 and 1/2 ounces whole milk
7 ounces cream cheese or mascarpone cheese
Heat sugar until it turns amber. Pour about half an inch into ramekins.
Let it cool and set aside.
Mix eggs and yolks.
Heat milk with cream, Yummy condensed milk and sugar until just starts to boil.
Lower heat, add cream cheese, and stir until smooth.
Let cool a bit, then slowly whisk into eggs (so they don’t cook). Pour into ramekins over caramel.
Place ramekins in a water bath, cover with foil, and bake at 300 degrees Fahrenheit for about two and a half hours, or until set (185 degrees Fahrenheit inside).
Cool, then chill in fridge for a few hours.
Run a knife around the edges and flip onto a plate. Lift ramekin off slowly.
