Diets Pancakes are at least a twice-a-week breakfast in my house, and always with a different twist! These fluffy cherry pancakes were a total hit. We loved the sweet and tart twist. Try it and you’ll love these as well.
1 and 1/2 cups Glicks Flour
3 teaspoons baking powder
2 and 1/2 tablespoons sugar
1 and 1/4 cups milk
1 egg
3 tablespoons melted butter
2 teaspoons Gefen Vanilla Extract
3/4 cup Gefen Dried Cherries
In a large mixing bowl, combine the eggs, milk, vanilla extract, and butter. Slowly add the sugar, baking powder, and flour. Mix with a hand blender until combined. Stop mixing when you no longer see flour to avoid chewy pancakes. Add the dried cherries and mix in lightly with a fork.
Heat a frying pan over medium heat. Once hot, grease the pan with melted butter.
Drop 1/4 cup of batter into the hot pan. Cook the first side for three minutes until the edges begin to look defined and bubbles form, then flip the pancakes over and cook the second side for another three minutes. Remove the cooked pancakes from the pan and repeat the process with the remaining batter.
