This is the simplest way to make garlicky mashed potatoes. Serve alongside this delicious rib-eye steak.

  • 2 pounds (1 kilogram) red potatoes, peeled and cubed

  • 2 cloves garlic, such as Mr. Dipz Peeled Garlic, halved

  • 1/2 cup unsweetened soy or coconut milk

  • 1 tablespoon oil

Directions

Make the Mashed Potatoes

Place potatoes and garlic in a medium saucepan; cover with cold water. Bring to a boil. Reduce heat and simmer 12 minutes or until the potatoes are very tender. Drain in a colander. Return to pan.

Add soy or coconut milk, oil, salt and pepper. Mash with a potato masher to desired consistency.

Variation:

Alternately, you can roast the garlic first and add the potatoes with the other ingredients.
