This dish does not always make it to the table. It smells so good baking, kids are just drawn to it…and it’s loaded with Vitamin A and other anti-oxidants.
1 pound sweet potatoes, peeled and sliced 1/2-inch thick
2 teaspoons Gefen Potato Starch
1 tablespoon sugar
1/2 teaspoon Gefen Cinnamon
pinch of salt
1/4 cup orange juice
1 tablespoon Heaven & Earth Lemon Juice
Place the sweet potatoes in an eight-inch square baking pan.
Combine the potato starch, sugar, cinnamon and salt in a bowl. Add the orange juice and lemon juice. Mix well and pour over the sweet potatoes.
Bake at 400 degrees Fahrenheit, covered, for one hour, then uncovered for 10 minutes
