Diets This green bean recipe is a real hit because it’s easy, and green beans don’t require bug-checking. It looks pretty and smells delicious!
2 pounds green beans, trimmed and rinsed
1/2 red onion, very thinly sliced
1 large clove garlic, finely chopped (not frozen)
1 teaspoon kosher salt
3 tablespoons sugar, or to taste
2 tablespoons Manischewitz Honey
2 teaspoons Haddar Dijon Mustard or other good-quality Dijon mustard
1/4 cup Tuscanini Apple Cider Vinegar
3/4 cup extra-virgin olive oil
Bring a large pot of water to boil. Add green beans and blanch (boil for about two minutes). Drain and cool green beans in an ice-water bath.
In a bowl, mash garlic with kosher salt. Add sugar and honey. Add in mustard, forming a paste. Whisk in vinegar. Slowly pour in olive oil and whisk well.
Toss green beans and onion with dressing. Let sit for one hour before serving.
Yield: 4 to 6 servings
