Grilled Eggplant with Chimichurri Salad

Ingredients

Eggplants

  • 2 eggplants, cut in half lengthwise

  • salt, to taste

  • pepper, to taste

Herb Salad

  • 1/4 cup washed and chopped fresh parsley

  • 1/4 cup washed and chopped fresh cilantro

  • 1/4 cup washed and chopped fresh dill

  • 2 tablespoons washed and diced scallions

  • 4 grape tomatoes or 1 plum tomato, deseeded and diced

  • 1 small shallot, diced

  • 2 cloves garlic, diced

For Serving

Directions

Prepare the Eggplants

1.

Sprinkle salt on the eggplants and let them sit for 20 minutes. Wipe off the liquid that comes to the surface.

Preheat grill to high heat.

Spray the flesh side of each eggplant with cooking spray and sprinkle with salt and pepper. Place eggplant halves face down on the grill and cook for 30 minutes, turning them over every five to seven minutes.

4.

Remove from the grill and use a fork to shred the flesh. Allow to cool.

5.

Combine ingredients for the herb salad in a medium bowl.

Prepare the Herb Salad

Combine ingredients for the herb salad in a medium bowl.

To Serve

1.

Scoop the herb salad into the eggplant flesh and mix lightly. Top with a drizzle of techinah and some coarse sea salt.

2.

Serve with tortilla chips and enjoy.
