Grilled squash, tomato, and turkay kabanos skewers over a light salad with creamy, dairy-free Lemon Garlic dressing. This salad makes a beautiful plated appetizer for a sheva brachos or special occasion.
mini skewers
1 box spring mix
1 box cherry tomatoes, quartered
2 Persian cucumbers, sliced
1 red onion, thinly sliced
1 yellow zucchini, cut in 1-inch chunks
1 green zucchini, cut in 1-inch chunks
1 (4.4-ounce) package Tirat Zvi Turkey Kabanos
1/4 cup roasted sunflower seeds
salt
pepper
1 tablespoon oil
1 cup mayonnaise (sugar-free, if needed)
1 teaspoon lemon juice
1 cube Gefen Frozen Garlic
1/2 teaspoon vinegar
1 tablespoon water
salt to taste
pepper to taste
Place cut zucchini on a baking sheet. Mix with salt, pepper, and oil. Broil on high for 15 minutes.
Slice turkey kabanos, then thread veggies and kabanos through skewers.
Place on top of lettuce, tomatoes, cucumber, and red onions, sunflower seeds.
Whisk dressing to combine. Drizzle on top of salad.
